For the Salmon:

  • 4 salmon fillets (skin on or off, your choice)
  • 2 tbsp olive oil
  • 1 tsp paprika
  • 1 tsp garlic powder
  • Salt & pepper, to taste

For the Parmesan Cream Sauce:

  • 2 tbsp butter
  • 4 cloves garlic, minced
  • ½ cup sun-dried tomatoes, chopped
  • 1 cup heavy cream
  • ½ cup chicken broth
  • ½ cup grated parmesan cheese
  • 1 tsp Italian seasoning
  • 2 cups fresh spinach
  • Salt & pepper, to taste

Instructions

Step 1: Prepare the Salmon

  1. Pat the salmon fillets dry with a paper towel.
  2. Season with paprika, garlic powder, salt, and pepper.

Step 2: Sear the Salmon

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Place the salmon fillets skin-side down and sear for 3-4 minutes per side until golden brown.
  3. Remove from the pan and set aside.

Step 3: Make the Creamy Parmesan Sauce

  1. In the same skillet, melt butter over medium heat. Add garlic and sauté for 30 seconds until fragrant.
  2. Stir in sun-dried tomatoes and cook for another minute.
  3. Pour in the chicken broth and let it simmer for 2 minutes to deglaze the pan.
  4. Lower the heat and add heavy cream, parmesan cheese, and Italian seasoning. Stir well.
  5. Add fresh spinach and let it wilt into the sauce. Season with salt and pepper to taste.

Step 4: Combine & Serve

  1. Return the salmon to the pan, spooning the sauce over the fillets.
  2. Simmer for 2 minutes until the salmon is warmed through.
  3. Serve immediately with your favorite side dish and enjoy!
