Ingredients
For the Salmon:
- 4 salmon fillets (skin on or off, your choice)
- 2 tbsp olive oil
- 1 tsp paprika
- 1 tsp garlic powder
- Salt & pepper, to taste
For the Parmesan Cream Sauce:
- 2 tbsp butter
- 4 cloves garlic, minced
- ½ cup sun-dried tomatoes, chopped
- 1 cup heavy cream
- ½ cup chicken broth
- ½ cup grated parmesan cheese
- 1 tsp Italian seasoning
- 2 cups fresh spinach
- Salt & pepper, to taste
Instructions
Step 1: Prepare the Salmon
- Pat the salmon fillets dry with a paper towel.
- Season with paprika, garlic powder, salt, and pepper.
Step 2: Sear the Salmon
- Heat olive oil in a large skillet over medium-high heat.
- Place the salmon fillets skin-side down and sear for 3-4 minutes per side until golden brown.
- Remove from the pan and set aside.
Step 3: Make the Creamy Parmesan Sauce
- In the same skillet, melt butter over medium heat. Add garlic and sauté for 30 seconds until fragrant.
- Stir in sun-dried tomatoes and cook for another minute.
- Pour in the chicken broth and let it simmer for 2 minutes to deglaze the pan.
- Lower the heat and add heavy cream, parmesan cheese, and Italian seasoning. Stir well.
