  • 1 lb large shrimp, peeled and deveined
  • 2 cups cooked jasmine or basmati rice
  • 1 cup pineapple chunks (fresh or canned)
  • 1 red bell pepper, diced
  • 1/2 cup shredded carrots
  • 1 avocado, sliced
  • 1/4 cup red onion, thinly sliced
  • 2 tablespoons olive oil
  • 1 tablespoon soy sauce or coconut aminos
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1 lime, juiced
  • Salt and black pepper, to taste
  • Fresh cilantro, chopped (for garnish)
  • Optional toppings: sliced jalapeños, sesame seeds, or sriracha

Instructions

Step 1: Prepare the Shrimp

  1. In a mixing bowl, toss the shrimp with olive oil, garlic powder, smoked paprika, salt, and pepper.

Step 2: Sauté the Shrimp

  1. Heat a skillet over medium-high heat and add the seasoned shrimp.
  2. Cook for 2-3 minutes per side, or until the shrimp turn pink and are cooked through. Remove from the skillet and set aside.

Step 3: Sauté the Pineapple and Bell Pepper

  1. In the same skillet, add a little more olive oil if needed.
  2. Add the pineapple chunks and diced bell pepper. Sauté for 3-4 minutes until the pineapple caramelizes slightly and the bell pepper softens.

Step 4: Assemble the Rice Bowl

  1. Divide the cooked rice among serving bowls.
  2. Top each bowl with sautéed shrimp, pineapple, bell pepper, shredded carrots, avocado slices, and red onion.

Step 5: Add the Finishing Touches

  1. Drizzle with soy sauce, lime juice, and your choice of optional toppings.
  2. Garnish with fresh cilantro and serve immediately.
