Ingredients
For the Grouper:
- 4 grouper fillets (6–8 oz each)
- 2 tablespoons olive oil
- 1 teaspoon paprika
- ½ teaspoon garlic powder
- ½ teaspoon salt
- ¼ teaspoon black pepper
For the Coconut-Ginger Sauce:
- 1 tablespoon olive oil
- 1 small onion, finely chopped
- 1-inch piece of ginger, grated
- 2 garlic cloves, minced
- 1 red chili or ½ teaspoon red pepper flakes (adjust to taste)
- 1 cup coconut milk (full-fat or light)
- 1 tablespoon soy sauce
- 1 tablespoon honey
- Juice of 1 lime
- 2 tablespoons chopped fresh cilantro

Instructions
Step 1: Season and Cook the Grouper
- Pat the grouper fillets dry with paper towels. In a small bowl, mix the paprika, garlic powder, salt, and black pepper. Rub the spice mixture onto both sides of the fillets.
- Heat the olive oil in a large skillet over medium-high heat. Add the fillets and cook for 3-4 minutes per side, or until the fish is golden and flakes easily with a fork. Remove the fillets from the skillet and set aside.
Step 2: Make the Coconut-Ginger Sauce
- In the same skillet, heat 1 tablespoon of olive oil over medium heat. Add the onion, ginger, and garlic, and sauté for 2-3 minutes until fragrant and softened.
- Stir in the chili or red pepper flakes, then add the coconut milk, soy sauce, honey, and lime juice. Simmer for 5-7 minutes, stirring occasionally, until the sauce thickens slightly.
Step 3: Combine and Serve
- Return the cooked grouper fillets to the skillet, spooning the sauce over the fish. Simmer for 2-3 minutes to let the flavors meld.
- Sprinkle with chopped cilantro and optional garnishes like mango slices, toasted coconut, or extra lime wedges.

- Choose Fresh Fish: Fresh grouper works best, but any firm white fish like mahi-mahi, halibut, or snapper is a great substitute.
