Base Ingredients:
- 3 cups granulated sugar
- 1 1/2 cups water
- 1/4 teaspoon cream of tartar
- 1 cup cornstarch
- 1/4 teaspoon salt
- 2 teaspoons rosewater
- 1/2 cup shelled pistachios, roughly chopped
Coating:
- 1/2 cup powdered sugar
- 1/4 cup cornstarch
Instructions
Step 1: Prepare the Sugar Syrup
- In a medium saucepan, combine the granulated sugar, water, and cream of tartar.
- Heat over medium heat, stirring until the sugar dissolves.
- Once dissolved, stop stirring and bring the mixture to a boil.
- Use a candy thermometer to monitor the temperature. Allow the syrup to reach 240°F (115°C), the “soft ball” stage. Remove from heat.
Step 2: Make the Cornstarch Mixture
- In another saucepan, whisk together 1 cup of cornstarch, salt, and 1 1/2 cups of water until smooth.
- Cook over medium heat, whisking constantly, until the mixture thickens into a smooth, glue-like paste.
Step 3: Combine the Mixtures
- Slowly pour the hot sugar syrup into the thickened cornstarch mixture, whisking continuously to combine.
- Reduce the heat to low and cook the mixture for 45-60 minutes, stirring frequently, until it becomes thick, shiny, and pale golden in color.
Step 4: Add Flavor and Pistachios
- Stir in the rosewater and chopped pistachios. Mix until evenly incorporated.
Step 5: Set the Turkish Delight
- Grease an 8×8-inch square pan or line it with parchment paper. Pour the mixture into the pan and spread it evenly.
- Let it sit at room temperature for at least 4 hours, or overnight, to set completely.
Step 6: Cut and Coat
- In a bowl, combine the powdered sugar and cornstarch for the coating.
- Once set, turn the Turkish Delight out onto a clean surface and cut it into small squares using a greased knife.
- Toss each piece in the powdered sugar mixture to coat evenly.
