Ingredients

Base Ingredients:

  • 3 cups granulated sugar
  • 1 1/2 cups water
  • 1/4 teaspoon cream of tartar
  • 1 cup cornstarch
  • 1/4 teaspoon salt
  • 2 teaspoons rosewater
  • 1/2 cup shelled pistachios, roughly chopped

Coating:

  • 1/2 cup powdered sugar
  • 1/4 cup cornstarch

Instructions

Step 1: Prepare the Sugar Syrup

  1. In a medium saucepan, combine the granulated sugar, water, and cream of tartar.
  2. Heat over medium heat, stirring until the sugar dissolves.
  3. Once dissolved, stop stirring and bring the mixture to a boil.
  4. Use a candy thermometer to monitor the temperature. Allow the syrup to reach 240°F (115°C), the “soft ball” stage. Remove from heat.

Step 2: Make the Cornstarch Mixture

  1. In another saucepan, whisk together 1 cup of cornstarch, salt, and 1 1/2 cups of water until smooth.
  2. Cook over medium heat, whisking constantly, until the mixture thickens into a smooth, glue-like paste.

Step 3: Combine the Mixtures

  1. Slowly pour the hot sugar syrup into the thickened cornstarch mixture, whisking continuously to combine.
  2. Reduce the heat to low and cook the mixture for 45-60 minutes, stirring frequently, until it becomes thick, shiny, and pale golden in color.

Step 4: Add Flavor and Pistachios

  1. Stir in the rosewater and chopped pistachios. Mix until evenly incorporated.

Step 5: Set the Turkish Delight

  1. Grease an 8×8-inch square pan or line it with parchment paper. Pour the mixture into the pan and spread it evenly.
  2. Let it sit at room temperature for at least 4 hours, or overnight, to set completely.

Step 6: Cut and Coat

  1. In a bowl, combine the powdered sugar and cornstarch for the coating.
  2. Once set, turn the Turkish Delight out onto a clean surface and cut it into small squares using a greased knife.
  3. Toss each piece in the powdered sugar mixture to coat evenly.

Notes

  • Use a Candy Thermometer: Precision is key when making sugar syrup, so ensure it reaches the correct temperature.
  • Be Patient: Stirring the mixture for 45-60 minutes may seem long, but it ensures the perfect chewy texture.
  • Customize Flavors: Swap rosewater for orange blossom water, lemon extract, or vanilla for different variations.
  • Store Properly: Keep Turkish Delight in an airtight container to prevent it from drying out or becoming sticky.
