Description

If you love sushi but want an easier, quicker way to enjoy all the flavors, this Teriyaki Salmon Sushi Bowl is the perfect solution! It’s packed with tender, glazed salmon, fluffy sushi rice, crisp vegetables, and a drizzle of creamy sauce. This dish is a healthy and satisfying way to bring sushi night to your kitchen—no rolling required!


Ingredients

For the Teriyaki Salmon:

  • Salmon fillets (2, skin-on or skinless)
  • Soy sauce (¼ cup)
  • Honey (2 tbsp)
  • Rice vinegar (1 tbsp)
  • Garlic (1 clove, minced)
  • Ginger (½ tsp, grated)
  • Sesame oil (1 tsp)
  • Cornstarch (1 tsp, mixed with 1 tbsp water)
  • Sesame seeds (for garnish)
  • Green onions (2 tbsp, chopped)

For the Bowl:

  • Sushi rice (1 cup, cooked)
  • Rice vinegar (2 tbsp)
  • Sugar (1 tsp)
  • Cucumber (½, sliced)
  • Avocado (1, sliced)
  • Carrot (½ cup, shredded)
  • Edamame (½ cup, cooked)
  • Nori sheets (1 sheet, cut into strips)

For the Sauce (Optional but Recommended):

  • Mayonnaise (¼ cup)
  • Sriracha (1 tbsp)
  • Lemon juice (1 tsp)

Instructions

Step 1: Prepare the Teriyaki Sauce

  1. In a small saucepan over medium heat, whisk together soy sauce, honey, rice vinegar, garlic, ginger, and sesame oil.
  2. Once simmering, stir in the cornstarch slurry and cook for 1-2 minutes until the sauce thickens. Remove from heat.

Step 2: Cook the Salmon

  1. Heat a skillet over medium-high heat and lightly oil it.
  2. Place the salmon fillets skin-side down and cook for 3-4 minutes.
  3. Flip, brush with the teriyaki sauce, and cook another 2-3 minutes until cooked through. Remove from heat and let rest for a minute before flaking into chunks.

Step 3: Prepare the Sushi Rice

  1. In a bowl, mix warm cooked sushi rice with rice vinegar and sugar. Stir well and let cool slightly.

Step 4: Assemble the Bowls

  1. Divide the sushi rice into serving bowls.
  2. Top with teriyaki salmon, cucumber, avocado, shredded carrots, edamame, and nori strips.
  3. Drizzle with extra teriyaki sauce and sprinkle with sesame seeds and green onions.

Step 5: Add the Sauce & Serve

  1. Mix the mayonnaise, sriracha, and lemon juice in a small bowl. Drizzle over the sushi bowls.
  2. Serve immediately and enjoy!

Notes

  • Use Fresh Salmon – The fresher the salmon, the better the taste!
  • Make Extra Teriyaki Sauce – Store leftovers in the fridge for future meals.
  • Short on Time? – Use store-bought teriyaki sauce to speed things up.
  • Customize It – Add mango, radish, or spicy tuna for variety.
