Description

This Sweet Potato Cinnamon Roll Cake takes all the comforting flavors of a classic cinnamon roll and transforms them into a moist, decadent cake. For the Cake:

  • 1 cup (225g) mashed sweet potatoes (cooked and cooled)
  • ¾ cup (150g) sugar
  • ½ cup (120ml) vegetable oil
  • ½ cup (120ml) milk
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups (250g) all-purpose flour
  • 1 ½ teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon

For the Cinnamon Swirl:

  • ½ cup (100g) brown sugar
  • 1 tablespoon ground cinnamon
  • 3 tablespoons (45g) melted butter

For the Glaze:

  • 1 cup (120g) powdered sugar
  • 2 tablespoons milk
  • ½ teaspoon vanilla extract

Instructions

Step 1: Preheat and Prep

  1. Preheat your oven to 350°F (175°C).
  2. Grease and flour a 9×13-inch baking pan or line it with parchment paper.

Step 2: Make the Cake Batter

  1. In a large mixing bowl, whisk together the mashed sweet potatoes, sugar, oil, milk, eggs, and vanilla until smooth.
  2. In another bowl, sift together the flour, baking powder, baking soda, salt, and cinnamon.
  3. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.

Step 3: Create the Cinnamon Swirl

  1. In a small bowl, mix the brown sugar, cinnamon, and melted butter until combined.
  2. Pour the cake batter into the prepared pan and smooth the top.
  3. Drizzle the cinnamon swirl mixture over the batter. Use a toothpick or skewer to gently swirl it into the batter for a marbled effect.

Step 4: Bake the Cake

  1. Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  2. Allow the cake to cool in the pan for 10 minutes, then transfer it to a cooling rack.

Step 5: Add the Glaze

  1. In a small bowl, whisk together the powdered sugar, milk, and vanilla until smooth.
  2. Drizzle the glaze over the cooled cake for a sweet finish.
