- 1 ½ teaspoons baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- 1 teaspoon ground cinnamon
For the Cinnamon Swirl:
- ½ cup (100g) brown sugar
- 1 tablespoon ground cinnamon
- 3 tablespoons (45g) melted butter
For the Glaze:
- 1 cup (120g) powdered sugar
- 2 tablespoons milk
- ½ teaspoon vanilla extract
Instructions
Step 1: Preheat and Prep
- Preheat your oven to 350°F (175°C).
- Grease and flour a 9×13-inch baking pan or line it with parchment paper.
Step 2: Make the Cake Batter
- In a large mixing bowl, whisk together the mashed sweet potatoes, sugar, oil, milk, eggs, and vanilla until smooth.
- In another bowl, sift together the flour, baking powder, baking soda, salt, and cinnamon.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.
Step 3: Create the Cinnamon Swirl
- In a small bowl, mix the brown sugar, cinnamon, and melted butter until combined.
- Pour the cake batter into the prepared pan and smooth the top.
