  • 1 lb shrimp, peeled and deveined
  • 1 bunch asparagus, trimmed and cut into 2-inch pieces
  • 2 tablespoons olive oil, divided
  • 3 garlic cloves, minced
  • 1/3 cup sweet chili sauce
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil
  • 1 teaspoon cornstarch mixed with 2 tablespoons water (slurry)
  • Salt and pepper, to taste
  • Sesame seeds and chopped green onions (optional, for garnish)

Instructions

Step 1: Prepare the Shrimp and Asparagus

  1. Season the shrimp with a pinch of salt and pepper.
  2. Heat 1 tablespoon of olive oil in a large skillet or wok over medium-high heat.
  3. Add the shrimp and cook for 2-3 minutes per side, until pink and fully cooked. Remove from the skillet and set aside.

Step 2: Cook the Asparagus

  1. In the same skillet, add the remaining tablespoon of olive oil.
  2. Toss in the asparagus and sauté for 3-4 minutes until tender but still crisp. Add the minced garlic and cook for 1 more minute.

Step 3: Make the Sauce

  1. In a small bowl, whisk together sweet chili sauce, soy sauce, and sesame oil.
  2. Pour the sauce into the skillet with the asparagus, stirring to coat evenly.
  3. Add the cornstarch slurry and cook for 1-2 minutes until the sauce thickens slightly.

Step 4: Combine and Serve

  1. Return the cooked shrimp to the skillet and toss everything together until well coated with the sauce.
  2. Remove from heat and garnish with sesame seeds and green onions, if desired.
  3. Serve hot over steamed rice, noodles, or enjoy it on its own.

Notes

  • Use Fresh Shrimp: Fresh or frozen shrimp works, but make sure to thaw completely if using frozen.
  • Don’t Overcook the Asparagus: Keep it crisp to maintain its vibrant texture and flavor.
  • Adjust Spice Level: For more heat, add a pinch of red pepper flakes or a drizzle of sriracha.
