Ingredients

  • All-Purpose Flour (2 cups)
  • Baking Powder (2 tsp)
  • Baking Soda (½ tsp)
  • Salt (¼ tsp)
  • Sugar (¾ cup)
  • Eggs (2 large)
  • Whole Milk (1 cup)
  • Unsalted Butter (½ cup, melted)
  • Vanilla Extract (1 tsp)

Optional Add-ins:

  • Chocolate Chips (½ cup)
  • Blueberries (½ cup, fresh or frozen)
  • Chopped Nuts (¼ cup)

Instructions

1. Preheat & Prep

  • Preheat your oven to 375°F (190°C).
  • Line a muffin tin with liners or lightly grease each cup.

2. Mix Dry Ingredients

  • In a large bowl, whisk together flour, baking powder, baking soda, salt, and sugar.

3. Mix Wet Ingredients

  • In a separate bowl, whisk eggs, milk, melted butter, and vanilla extract until well combined.

4. Combine & Mix Gently

  • Pour the wet ingredients into the dry ingredients.
  • Gently fold with a spatula until just combined—don’t overmix!

5. Add Optional Fillings

  • If using chocolate chips, berries, or nuts, fold them in now.

6. Fill & Bake

  • Spoon the batter into the muffin cups, filling each about ¾ full.
  • Bake for 18-22 minutes, or until a toothpick inserted in the center comes out clean.

7. Cool & Enjoy

 

  • Let muffins cool in the tin for 5 minutes before transferring them to a wire rack.
  • Serve warm or at room temperature!

Notes

  • Don’t Overmix: Overmixing can make the muffins dense. Mix just until combined.
  • Use Room Temperature Ingredients: This helps create a smooth, airy batter.
  • Muffin Liners or Grease?: Either works, but liners make cleanup easier.
  • Baking Tip: For an extra high rise, start at 400°F (200°C) for the first 5 minutes, then reduce to 375°F (190°C) for the rest of the baking time.
