Ingredients

  • Large Portobello Mushrooms (4, stems removed)
  • Olive Oil (2 tbsp)
  • Garlic (2 cloves, minced)
  • Onion (½ cup, finely chopped)
  • Spinach (1 cup, fresh, chopped)
  • Cherry Tomatoes (½ cup, diced)
  • Parmesan Cheese (¼ cup, grated)
  • Mozzarella Cheese (½ cup, shredded)
  • Breadcrumbs (¼ cup, optional for a crispy top)
  • Italian Seasoning (1 tsp)
  • Salt & Pepper (to taste)
  • Fresh Parsley (for garnish)

Instructions

1. Preheat the Oven

  • Preheat your oven to 375°F (190°C).
  • Line a baking sheet with parchment paper.

2. Prepare the Mushrooms

  • Clean the Portobello mushrooms with a damp paper towel.
  • Remove the stems and gently scrape out some of the gills with a spoon for extra room.
  • Brush both sides with olive oil and place them on the baking sheet, gill-side up.

3. Make the Filling

  • Heat 1 tbsp olive oil in a pan over medium heat.
  • Sauté onions and garlic until softened (about 2 minutes).
  • Add spinach and tomatoes, cooking until wilted.
  • Remove from heat and stir in Parmesan, mozzarella, breadcrumbs, Italian seasoning, salt, and pepper.

4. Stuff the Mushrooms

  • Evenly divide the filling among the mushrooms, gently pressing it in.

5. Bake Until Golden

  • Bake for 18-20 minutes, until the mushrooms are tender and the cheese is bubbly and golden.

6. Garnish & Serve

  • Sprinkle with fresh parsley and serve warm!

Notes

  • Don’t Overbake: Mushrooms release moisture when overcooked, so keep an eye on them.
  • Customize the Filling: Add chopped nuts, cooked ground turkey, or crumbled feta for a twist.
