Ingredients
- Large Portobello Mushrooms (4, stems removed)
- Olive Oil (2 tbsp)
- Garlic (2 cloves, minced)
- Onion (½ cup, finely chopped)
- Spinach (1 cup, fresh, chopped)
- Cherry Tomatoes (½ cup, diced)
- Parmesan Cheese (¼ cup, grated)
- Mozzarella Cheese (½ cup, shredded)
- Breadcrumbs (¼ cup, optional for a crispy top)
- Italian Seasoning (1 tsp)
- Salt & Pepper (to taste)
- Fresh Parsley (for garnish)
Instructions
1. Preheat the Oven
- Preheat your oven to 375°F (190°C).
- Line a baking sheet with parchment paper.
2. Prepare the Mushrooms
- Clean the Portobello mushrooms with a damp paper towel.
- Remove the stems and gently scrape out some of the gills with a spoon for extra room.
- Brush both sides with olive oil and place them on the baking sheet, gill-side up.
3. Make the Filling
- Heat 1 tbsp olive oil in a pan over medium heat.
- Sauté onions and garlic until softened (about 2 minutes).
- Add spinach and tomatoes, cooking until wilted.
- Remove from heat and stir in Parmesan, mozzarella, breadcrumbs, Italian seasoning, salt, and pepper.
4. Stuff the Mushrooms
- Evenly divide the filling among the mushrooms, gently pressing it in.
5. Bake Until Golden
- Bake for 18-20 minutes, until the mushrooms are tender and the cheese is bubbly and golden.
6. Garnish & Serve
- Sprinkle with fresh parsley and serve warm!
