Instructions
Step 1: Prepare the Steaks
- Season the steaks generously with salt and pepper on both sides.
- Heat olive oil in a cast-iron skillet over medium-high heat until shimmering.
- Sear the steaks for 3-5 minutes per side for medium-rare, or until cooked to your preferred doneness.
- Remove the steaks from the skillet and let them rest, covered with foil.
Step 2: Make the Garlic Cream Sauce
5. In the same skillet, reduce the heat to medium and melt the butter.
6. Add the minced garlic and sauté until fragrant, about 1 minute.
7. Stir in the chicken or beef broth, scraping up any browned bits from the skillet. Simmer for 2-3 minutes.
8. Lower the heat and pour in the heavy cream, whisking continuously. Simmer until the sauce thickens slightly, about 5 minutes.
9. Stir in the Parmesan cheese until melted and smooth. Season with salt and pepper to taste.
Step 3: Serve and Garnish
10. Place the steaks back in the skillet with the sauce to reheat gently for 1-2 minutes.
11. Transfer the steaks to plates, spoon the garlic cream sauce generously over each, and garnish with fresh thyme or parsley.
