  • ½ teaspoon Italian seasoning
  • Salt and pepper, to taste
  • 2 tablespoons grated Parmesan cheese (optional, for topping)

Instructions

Step 1: Prepare the Salmon

  1. Preheat your oven to 375°F (190°C).
  2. Lightly grease a baking dish with olive oil or cooking spray.
  3. Season the salmon fillets with salt, pepper, and Italian seasoning. Arrange them in the prepared baking dish.

Step 2: Make the Creamy Spinach Mixture

  1. In a mixing bowl, combine the cream cheese, heavy cream, minced garlic, and half of the shredded mozzarella. Stir until smooth and well combined.
  2. Fold in the chopped spinach, mixing gently to distribute it evenly.

Step 3: Assemble the Casserole

  1. Spoon the creamy spinach mixture evenly over the salmon fillets, ensuring they are fully covered.
  2. Sprinkle the remaining mozzarella cheese over the top. Add grated Parmesan if using.

Step 4: Bake the Casserole

  1. Bake in the preheated oven for 20-25 minutes, or until the salmon is cooked through and flakes easily with a fork. The cheese on top should be melted and bubbly.
  2. For a golden finish, broil the casserole for 2-3 minutes at the end of baking.
