  • 4 large sweet potatoes (about 3 lbs), peeled and cubed
  • ½ cup pure maple syrup
  • 2 tablespoons unsalted butter, melted
  • ½ cup milk (or your preferred non-dairy milk)

  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • ¼ teaspoon salt

For the Pecan Streusel Topping:

  • ½ cup all-purpose flour
  • ½ cup brown sugar, packed
  • ¼ cup unsalted butter, softened
  • ½ cup chopped pecans
  • ½ teaspoon ground cinnamon

Instructions

Step 1: Cook the Sweet Potatoes

  1. Peel and cube the sweet potatoes.
  2. Bring a large pot of salted water to a boil, then add the sweet potatoes.
  3. Cook for 15-20 minutes or until tender. Drain and let cool slightly.

Step 2: Prepare the Sweet Potato Base

  1. In a large mixing bowl, mash the sweet potatoes until smooth using a potato masher or electric mixer.
  2. Add the maple syrup, melted butter, milk, vanilla extract, cinnamon, nutmeg, and salt. Mix until creamy and well-combined.
  3. Spread the sweet potato mixture evenly into a greased 9×13-inch baking dish.

Step 3: Make the Pecan Streusel Topping

  1. In a small bowl, combine the flour, brown sugar, cinnamon, and softened butter. Mix with a fork or your hands until crumbly.
  2. Stir in the chopped pecans.

Step 4: Assemble and Bake

  1. Sprinkle the pecan streusel evenly over the sweet potato base.
  2. Preheat your oven to 350°F (175°C).
  3. Bake the casserole for 25-30 minutes or until the topping is golden brown and crispy.
