Ingredients

- 4 large sweet potatoes (about 3 lbs), peeled and cubed
- ½ cup pure maple syrup
- 2 tablespoons unsalted butter, melted
- ½ cup milk (or your preferred non-dairy milk)
- 1 teaspoon vanilla extract

- ¼ teaspoon ground nutmeg
- ¼ teaspoon salt
For the Pecan Streusel Topping:
- ½ cup all-purpose flour
- ½ cup brown sugar, packed
- ¼ cup unsalted butter, softened
- ½ cup chopped pecans
- ½ teaspoon ground cinnamon
Instructions
Step 1: Cook the Sweet Potatoes
- Peel and cube the sweet potatoes.
- Bring a large pot of salted water to a boil, then add the sweet potatoes.
- Cook for 15-20 minutes or until tender. Drain and let cool slightly.
Step 2: Prepare the Sweet Potato Base
- In a large mixing bowl, mash the sweet potatoes until smooth using a potato masher or electric mixer.
- Add the maple syrup, melted butter, milk, vanilla extract, cinnamon, nutmeg, and salt. Mix until creamy and well-combined.
- Spread the sweet potato mixture evenly into a greased 9×13-inch baking dish.
Step 3: Make the Pecan Streusel Topping
- In a small bowl, combine the flour, brown sugar, cinnamon, and softened butter. Mix with a fork or your hands until crumbly.
- Stir in the chopped pecans.
Step 4: Assemble and Bake
- Sprinkle the pecan streusel evenly over the sweet potato base.
- Preheat your oven to 350°F (175°C).
- Bake the casserole for 25-30 minutes or until the topping is golden brown and crispy.
