Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 (14 oz) can of crushed tomatoes
  • 1 cup heavy cream or coconut cream
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • ½ teaspoon paprika
  • 1 cup fresh basil leaves, chopped (reserve some for garnish)
  • ½ cup grated Parmesan cheese (optional)
  • 1 tablespoon olive oil
  • Salt and pepper, to taste

Instructions

Step 1: Prepare the Slow Cooker

  1. Lightly grease the inside of your slow cooker with olive oil.

Step 2: Add the Ingredients
2. Place the chicken breasts in the slow cooker. Season with salt, pepper, paprika, oregano, and dried basil.
3. In a mixing bowl, whisk together the crushed tomatoes, heavy cream, and minced garlic. Pour the mixture over the chicken.

Step 3: Cook the Chicken
4. Cover and cook on low for 6-7 hours or high for 3-4 hours, until the chicken is tender and cooked through.

Step 4: Add Final Touches
5. About 15 minutes before serving, stir in the fresh basil and Parmesan cheese, if using. Allow the flavors to meld.

Step 5: Serve
6. Garnish with extra fresh basil and serve hot over pasta, rice, or mashed potatoes.

Notes

  • Sear the Chicken First: For extra flavor, quickly sear the chicken in a skillet before placing it in the slow cooker.
  • Fresh Basil is Key: While dried basil is great, the fresh basil really enhances the flavor in the final dish.
  • Customize the Creaminess: If you prefer a thicker sauce, mix 1 tablespoon of cornstarch with 2 tablespoons of water and stir it into the sauce 30 minutes before serving.
