For the Skewers:

  • 1 lb beef sirloin, cut into 1-inch cubes
  • 1 lb large shrimp, peeled and deveined
  • 2 bell peppers, cut into 1-inch pieces
  • 1 red onion, cut into chunks
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • Salt and black pepper, to taste
  • Skewers (soaked in water if using wooden ones)

For the Chimichurri:

  • 1 cup fresh parsley, finely chopped
  • 1/4 cup fresh cilantro, finely chopped (optional)
  • 4 cloves garlic, minced
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon dried oregano
  • 1/2 teaspoon red pepper flakes (optional)
  • Salt and black pepper, to taste

Instructions

Step 1: Marinate the Meat and Shrimp

  1. In a large bowl, combine olive oil, smoked paprika, garlic powder, salt, and pepper.
  2. Toss the beef cubes and shrimp in the marinade, ensuring they are evenly coated. Cover and refrigerate for 15-20 minutes.

Step 2: Prepare the Chimichurri

  1. In a mixing bowl, combine parsley, cilantro (if using), minced garlic, olive oil, red wine vinegar, oregano, red pepper flakes, salt, and black pepper. Mix well and let it sit for the flavors to meld.

Step 3: Assemble the Skewers

  1. Thread the beef, shrimp, bell peppers, and red onion onto the skewers, alternating for a colorful presentation.

Step 4: Grill the Skewers

  1. Preheat the grill or grill pan to medium-high heat.
  2. Place the skewers on the grill and cook for 2-3 minutes per side for shrimp and 3-4 minutes per side for beef, until cooked to your desired doneness.

Step 5: Serve with Chimichurri

  1. Transfer the skewers to a serving platter and drizzle generously with chimichurri. Serve extra sauce on the side for dipping.
