  • 4 salmon fillets (68 oz each): Skinless, with a pocket cut for stuffing.
  • 1/2 lb shrimp, peeled and deveined: Finely chopped.
  • 2 tablespoons butter: For sautéing and adding richness.

  • 1/4 cup breadcrumbs or panko: Adds structure to the stuffing.
  • 1/4 cup cream cheese, softened: For a creamy, rich filling.
  • 2 tablespoons grated Parmesan cheese: Adds savory depth.
  • 2 tablespoons fresh parsley, chopped: For freshness.
  • 1 teaspoon lemon juice: To brighten the flavors.
  • Salt and pepper, to taste: To season the dish.
  • 1 tablespoon olive oil: For brushing the salmon.

Instructions

Step 1: Prepare the Salmon

  1. Preheat your oven to 375°F (190°C).
  2. Use a sharp knife to cut a pocket into the side of each salmon fillet, being careful not to slice all the way through.
  3. Season the salmon with salt, pepper, and a drizzle of olive oil. Set aside.

Step 2: Make the Shrimp Filling

  1. In a skillet, melt the butter over medium heat. Add garlic and sauté until fragrant.
  2. Stir in the chopped shrimp and cook until pink, about 2-3 minutes.
  3. Remove the skillet from heat and mix in breadcrumbs, cream cheese, Parmesan, parsley, lemon juice, salt, and pepper. Stir until well combined.

Step 3: Stuff the Salmon

  1. Divide the shrimp mixture into four portions and stuff each salmon fillet pocket generously.
  2. Place the stuffed salmon in a greased baking dish.

Step 4: Bake the Salmon

  1. Bake in the preheated oven for 18-22 minutes, or until the salmon is cooked through and flakes easily with a fork.
