Instructions
Step 1: Prepare the Salmon
- Preheat your oven to 375°F (190°C).
- Use a sharp knife to cut a pocket into the side of each salmon fillet, being careful not to slice all the way through.
- Season the salmon with salt, pepper, and a drizzle of olive oil. Set aside.
Step 2: Make the Shrimp Filling
- In a skillet, melt the butter over medium heat. Add garlic and sauté until fragrant.
- Stir in the chopped shrimp and cook until pink, about 2-3 minutes.
- Remove the skillet from heat and mix in breadcrumbs, cream cheese, Parmesan, parsley, lemon juice, salt, and pepper. Stir until well combined.
Step 3: Stuff the Salmon
- Divide the shrimp mixture into four portions and stuff each salmon fillet pocket generously.
- Place the stuffed salmon in a greased baking dish.
Step 4: Bake the Salmon
- Bake in the preheated oven for 18-22 minutes, or until the salmon is cooked through and flakes easily with a fork.
