  • 1/2 cup breadcrumbs or panko (optional): For a crunchy topping.
  • 1 tablespoon olive oil: For roasting the jalapeños.

Instructions

Step 1: Prepare the Jalapeños

  1. Preheat your oven to 400°F (200°C).
  2. Cut each jalapeño in half lengthwise and carefully remove the seeds and membranes with a small spoon.
  3. Place the jalapeño halves on a baking sheet lined with parchment paper, cut side up. Drizzle with olive oil and roast in the oven for 5 minutes to soften slightly.

Step 2: Prepare the Filling

  1. In a mixing bowl, combine cream cheese, cheddar cheese, green onions, garlic powder, salt, and pepper. Mix until smooth and well combined.

Step 3: Stuff the Jalapeños

  1. Fill each roasted jalapeño half with a spoonful of the cheese mixture.
  2. Gently press a shrimp into the center of each stuffed jalapeño.

Step 4: Add Crunch (Optional)

  1. If desired, sprinkle breadcrumbs or panko over the top for added texture.

Step 5: Bake the Poppers

  1. Return the stuffed jalapeños to the oven and bake for 12-15 minutes, or until the shrimp is cooked through and the cheese is bubbly.
