Ingredients

For the Garlic Butter:

  • Unsalted Butter (4 tbsp, softened) – Creates the perfect crispy bread.

  • Garlic (2 cloves, minced) – For an aromatic, garlicky kick.

  • Fresh Parsley (1 tbsp, chopped) – Adds a fresh touch.

  • Salt (¼ tsp) – Enhances the garlic butter flavor.

For the Shrimp Filling:

  • Shrimp (½ lb, peeled, deveined, chopped) – Cooked to juicy perfection.

  • Olive Oil (1 tbsp) – For sautéing the shrimp.

  • Salt & Pepper (to taste) – Enhances the flavor.

  • Paprika (½ tsp, optional) – Adds a subtle smoky touch.

  • Lemon Juice (1 tsp) – Brightens up the shrimp.

For the Sandwich:

  • Sourdough or French Bread (4 slices) – Holds up well to the fillings.

  • Monterey Jack Cheese (1 ½ cups, shredded) – Creamy and melty!

  • Parmesan Cheese (2 tbsp, optional) – Adds extra cheesy goodness.


Instructions

Step 1: Make the Garlic Butter

  1. In a small bowl, mix softened butter, minced garlic, chopped parsley, and salt until well combined.

Step 2: Cook the Shrimp

  1. Heat olive oil in a skillet over medium heat.

  2. Add the chopped shrimp, salt, pepper, and paprika, and cook for 2–3 minutes until the shrimp turn pink.

  3. Squeeze in lemon juice, stir, and remove from heat.

Step 3: Assemble the Sandwich

  1. Spread the garlic butter evenly on one side of each slice of bread.

  2. Place the bread butter-side down in a skillet over medium-low heat.

  3. Layer with Monterey Jack cheese, cooked shrimp, and Parmesan cheese.

  4. Top with another slice of bread, butter-side up.

Step 4: Grill to Perfection

  1. Cook for 3–4 minutes per side until golden brown and crispy, pressing down slightly with a spatula.

  2. Flip carefully and cook until the cheese is fully melted.

Step 5: Serve & Enjoy!

 

  1. Let the sandwiches rest for a minute before slicing.

  2. Serve with a side of tomato soup or a crisp salad!

Notes

Use Fresh Bread – Sourdough or French bread holds up best.
Don’t Overcook the Shrimp – They cook quickly, so keep an eye on them!
