Instructions

Step 1: Preheat and Prep

  1. Preheat your oven to 425°F (220°C) or heat your grill to medium-high.
  2. Cut 4 large sheets of aluminum foil, about 12 inches long each.

Step 2: Prepare the Ingredients

  1. In a large mixing bowl, toss the shrimp, potatoes, corn, and smoked beef sausage with melted butter, Old Bay seasoning, garlic powder, smoked paprika, salt, and pepper.

Step 3: Assemble the Foil Packs

  1. Divide the mixture evenly among the foil sheets.
  2. Add a lemon slice to each pack for extra flavor.
  3. Fold the edges of the foil together to seal each pack tightly, ensuring no steam escapes during cooking.

Step 4: Cook the Foil Packs

  1. Place the foil packs on a baking sheet if using the oven, or directly on the grill grates.
  2. Cook for 20-25 minutes, flipping the packs halfway through if grilling. The shrimp should be pink, the potatoes tender, and the sausage sizzling.

Step 5: Serve

  1. Carefully open each foil pack (watch out for steam!) and sprinkle with fresh parsley if desired. Serve warm with extra lemon wedges on the side.
