Description

These Shrimp and Asparagus Foil Packs are not only quick and easy to prepare but also packed with bright, fresh flavors. Perfect for grilling, baking, or even cooking over a campfire, they’re an excellent option for healthy, flavorful meals with minimal cleanup.

Ingredients

  • 1 lb large shrimp, peeled and deveined
  • 1 lb asparagus, trimmed
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • 1/2 teaspoon Italian seasoning
  • Salt and black pepper, to taste
  • 1 lemon, sliced into thin rounds
  • Fresh parsley, chopped (for garnish)

Instructions

Step 1: Prepare the Foil

  1. Cut large sheets of aluminum foil, about 12×12 inches each. You’ll need one for each serving.

Step 2: Season the Shrimp and Asparagus

  1. In a mixing bowl, toss the shrimp with olive oil, garlic, paprika, Italian seasoning, salt, and pepper.
  2. Place the asparagus on the foil sheet and drizzle with a little olive oil. Sprinkle with salt and pepper.

Step 3: Assemble the Foil Packs

  1. Arrange the seasoned shrimp on top of the asparagus in each foil sheet.
  2. Add a few slices of lemon on top for a burst of citrus flavor.

Step 4: Seal the Packs

  1. Fold the edges of the foil together to create a sealed packet, leaving a little room inside for air to circulate.

Step 5: Cook the Foil Packs

  • On the Grill: Preheat to medium-high heat and cook the foil packs for 8-10 minutes, flipping halfway through.
  • In the Oven: Preheat to 400°F (200°C) and bake the foil packs on a baking sheet for 12-15 minutes.

Step 6: Serve and Enjoy

  1. Carefully open the foil packs (watch out for steam!) and transfer the contents to a plate.
  2. Garnish with fresh parsley and serve with extra lemon wedges, if desired.

Notes

  • Use Fresh Shrimp: For the best flavor and texture, use fresh or high-quality frozen shrimp.
  • Don’t Overcook: Shrimp cook quickly, so keep an eye on them to avoid rubbery results.
  • Mix It Up: Add cherry tomatoes, bell peppers, or zucchini for extra color and nutrients.
