Instructions
In a pot, bring the chicken broth to a simmer. Add the chicken breasts and cook for 15–20 minutes, or until fully cooked and tender. Remove and shred with two forks.
In a skillet, melt butter over medium heat. Whisk in the flour and cook for 1–2 minutes until golden brown. Slowly add the broth while whisking continuously. Stir in the milk, garlic powder, onion powder, thyme, salt, and pepper. Let simmer for 5 minutes until thickened. Add the shredded chicken and stir to coat.
While the chicken is cooking, boil the potatoes in salted water until fork-tender, about 15 minutes. Drain and mash with butter, warm milk, salt, and pepper until smooth.
