Ingredients

For the Shredded Chicken Gravy:

  • Chicken Breast (2 large, about 1 lb) – Boneless and skinless.
  • Chicken Broth (2 cups) – Adds depth and richness.
  • Butter (3 tbsp) – For a smooth, velvety gravy.
  • All-Purpose Flour (3 tbsp) – Thickens the gravy.
  • Milk (½ cup) – For a creamy touch.
  • Garlic Powder (1 tsp) – Adds a warm, savory flavor.
  • Onion Powder (1 tsp) – Enhances the overall taste.
  • Dried Thyme (½ tsp) – A perfect herbal note.
  • Salt (½ tsp, or to taste) – Balances flavors.
  • Black Pepper (½ tsp, or to taste) – Adds warmth.

For the Mashed Potatoes:

  • Russet Potatoes (4 large, peeled and cubed) – The best for fluffy mashed potatoes.
  • Butter (4 tbsp) – Rich and creamy texture.
  • Milk (½ cup, warm) – Helps create smooth mashed potatoes.
  • Salt (½ tsp, or to taste) – Enhances flavor.
  • Black Pepper (¼ tsp, or to taste) – Adds a little kick.

Instructions

Cook the Chicken

In a pot, bring the chicken broth to a simmer. Add the chicken breasts and cook for 15–20 minutes, or until fully cooked and tender. Remove and shred with two forks.

2. Make the Gravy

In a skillet, melt butter over medium heat. Whisk in the flour and cook for 1–2 minutes until golden brown. Slowly add the broth while whisking continuously. Stir in the milk, garlic powder, onion powder, thyme, salt, and pepper. Let simmer for 5 minutes until thickened. Add the shredded chicken and stir to coat.

3. Prepare the Mashed Potatoes

While the chicken is cooking, boil the potatoes in salted water until fork-tender, about 15 minutes. Drain and mash with butter, warm milk, salt, and pepper until smooth.

4. Serve and Enjoy!

Scoop the mashed potatoes onto a plate, ladle the shredded chicken gravy on top, and dig in!
