Description

Ingredients

  • All-Purpose Flour (3 ½ cups) – Provides structure for the bread.
  • Warm Water (1 ½ cups) – Helps activate the yeast and form the dough.
  • Instant Yeast (1 tsp) – No proofing needed, just mix it in.
  • Salt (2 tsp) – Enhances the overall flavor.
  • Garlic (4 cloves, roasted & mashed) – Adds a deep, savory taste.
  • Fresh Rosemary (2 tbsp, chopped) – Infuses the bread with aromatic flavor.
  • Olive Oil (1 tbsp) – Adds moisture and richness.
  • Cornmeal or Flour (for dusting the surface) – Helps prevent sticking.

Instructions

Step 1: Roast the Garlic

  1. Preheat your oven to 400°F (200°C).
  2. Slice off the top of a garlic bulb, drizzle with olive oil, wrap in foil, and roast for 30–40 minutes until soft.
  3. Let cool, then squeeze out the roasted garlic cloves and mash them.

Step 2: Prepare the Dough

  1. In a large mixing bowl, combine flour, salt, and yeast.
  2. Add the roasted garlic, chopped rosemary, and warm water. Stir until a sticky dough forms (no kneading needed).
  3. Cover with plastic wrap and let it rise at room temperature for 12–18 hours until it doubles in size and is bubbly.

Step 3: Shape the Dough

  1. Lightly flour your surface and hands, then gently shape the dough into a ball (do not knead).
  2. Place it on parchment paper, cover it with a towel, and let it rest for 30 minutes while the oven preheats.

Step 4: Bake the Bread

  1. Preheat your oven to 450°F (230°C) and place a Dutch oven inside to heat for 30 minutes.
  2. Carefully transfer the dough (with parchment) into the hot Dutch oven.
  3. Cover with the lid and bake for 30 minutes, then remove the lid and bake for another 10–15 minutes until golden brown.

Step 5: Cool and Enjoy

  1. Let the bread cool on a wire rack for at least 20 minutes before slicing.

Notes

  • Use warm water (not hot!) to activate the yeast properly.
  • Let it rise overnight for the best texture and flavor.
  • For extra crunch, mist the oven with water before baking.
  • No Dutch oven? Use a baking sheet with an oven-safe bowl covering the dough.
