  • 4 boneless, skinless chicken breasts
  • 1 cup fresh spinach leaves
  • 1/2 cup roasted red peppers, sliced
  • 1 cup shredded mozzarella cheese
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1 teaspoon paprika
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • Toothpicks or kitchen twine (to secure the chicken).

Instructions

Step 1: Prepare the Chicken

  1. Preheat your oven to 375°F (190°C).
  2. Using a sharp knife, carefully slice each chicken breast horizontally to create a pocket—don’t cut all the way through.
  3. Season the inside and outside of the chicken with salt, pepper, paprika, and Italian seasoning.

Step 2: Make the Filling

  1. In a bowl, combine the spinach, roasted red peppers, mozzarella cheese, and minced garlic. Mix until evenly distributed.

Step 3: Stuff the Chicken

  1. Stuff each chicken breast with the prepared filling.
  2. Secure the edges with toothpicks or kitchen twine to keep the filling in place during cooking.

Step 4: Sear the Chicken

  1. Heat olive oil in an oven-safe skillet over medium heat.
  2. Sear the stuffed chicken breasts for 2-3 minutes per side until golden brown.

Step 5: Bake to Perfection

  1. Transfer the skillet to the preheated oven (or place the chicken in a baking dish).
  2. Bake for 20-25 minutes or until the chicken reaches an internal temperature of 165°F (74°C).
