Instructions

Step 1: Prepare the Puff Pastry

  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Roll out the thawed puff pastry on a lightly floured surface. Cut into 12 equal squares (about 3×3 inches).

Step 2: Make the Cream Cheese Filling

  1. In a mixing bowl, combine softened cream cheese, powdered sugar, and vanilla extract. Beat until smooth and creamy.

Step 3: Assemble the Bites

  1. Place a teaspoon of the cream cheese mixture in the center of each puff pastry square.
  2. Top with one or two fresh raspberries.
  3. Fold the corners of the puff pastry towards the center, pinching lightly to seal.

Step 4: Bake

  1. Transfer the assembled bites to the prepared baking sheet. Brush the tops with beaten egg for a golden finish.
  2. Bake for 15-18 minutes or until the pastry is puffed and golden brown.
