  • 2 tablespoons powdered sugar
  • 1/4 cup pumpkin puree
  • 1/2 teaspoon pumpkin spice
  • 1/4 teaspoon vanilla extract

For the French Toast:

  • 8 slices of thick bread (brioche or challah works best)
  • 2 large eggs
  • 3/4 cup milk
  • 1/4 cup pumpkin puree
  • 1 teaspoon pumpkin spice
  • 1/2 teaspoon cinnamon
  • 1 teaspoon vanilla extract
  • 2 tablespoons butter (for cooking)

For Serving:

  • Maple syrup
  • Powdered sugar
  • Whipped cream (optional)

Instructions

Step 1: Prepare the Filling

  1. In a mixing bowl, combine the softened cream cheese, powdered sugar, pumpkin puree, pumpkin spice, and vanilla extract.
  2. Mix until smooth and creamy. Set aside.

Step 2: Make the Batter

  1. In a separate bowl, whisk together the eggs, milk, pumpkin puree, pumpkin spice, cinnamon, and vanilla extract until fully combined.

Step 3: Assemble the French Toast

  1. Spread the pumpkin cream cheese filling onto four slices of bread.
  2. Top with the remaining slices to create sandwiches.

Step 4: Cook the French Toast

  1. Heat a non-stick skillet or griddle over medium heat and add a bit of butter to coat the surface.
  2. Dip each sandwich into the batter, ensuring both sides are evenly coated.
  3. Place the sandwiches on the skillet and cook for 3-4 minutes per side, or until golden brown and cooked through.

Step 5: Serve and Enjoy

  1. Transfer the French toast to a plate, dust with powdered sugar, and drizzle with maple syrup.
  2. Add a dollop of whipped cream for an extra indulgent touch.

Notes

  • Choose the Right Bread: Brioche or challah bread is ideal for its soft, rich texture.
  • Adjust Sweetness: Feel free to add more powdered sugar to the filling or syrup if you like it sweeter.
  • Make It Ahead: Prepare the filling and batter the night before for a quicker morning prep.
  • Add Texture: Sprinkle chopped pecans or walnuts on top for a delightful crunch.
