This Philly Cheesesteak Meatloaf is a hearty, cheesy, and flavorful twist on a family favorite. It’s easy to make, packed with savory goodness, and the melty cheese in every bite will have everyone coming back for seconds.

For the Meatloaf:

  • 1 ½ lbs ground beef: Lean or regular, depending on your preference.
  • 1 green bell pepper (diced): For that Philly cheesesteak flavor.
  • 1 onion (diced): Adds sweetness and depth.
  • 1 cup mushrooms (chopped): Optional, but highly recommended for added texture.
  • 2 eggs: Helps bind the meatloaf together.
  • 1 cup breadcrumbs: For structure.
  • 1 teaspoon garlic powder: For extra flavor.
  • 1 teaspoon Worcestershire sauce: Adds a savory kick.
  • 1 teaspoon salt: To enhance the flavors.
  • 1/2 teaspoon black pepper: For a little spice.

For the Filling:

  • 1 cup provolone or mozzarella cheese (shredded): Melty, cheesy goodness.

For the Topping:

  • 1/2 cup provolone or mozzarella cheese (shredded): To finish it off!

Instructions

Step 1: Preheat the Oven

  1. Preheat your oven to 375°F (190°C). Grease a loaf pan or line it with parchment paper.

Step 2: Sauté the Vegetables

  1. Heat a small amount of oil in a skillet over medium heat.
  2. Sauté the diced green bell pepper, onion, and mushrooms for about 5 minutes until softened. Set aside to cool slightly.

Step 3: Prepare the Meatloaf Mixture

  1. In a large mixing bowl, combine the ground beef, sautéed vegetables, eggs, breadcrumbs, garlic powder, Worcestershire sauce, salt, and black pepper. Mix until just combined—don’t overmix, as it can make the meatloaf dense.

Step 4: Assemble the Meatloaf

  1. Transfer half of the meat mixture to the prepared loaf pan and press it down evenly.
  2. Sprinkle the shredded provolone or mozzarella cheese over the meat, leaving a small border around the edges.
  3. Top with the remaining meat mixture, pressing it down to seal the cheese inside.

Step 5: Bake the Meatloaf

  1. Cover the loaf pan with foil and bake for 40 minutes.
  2. Remove the foil, sprinkle the remaining cheese on top, and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly, and the internal temperature of the meatloaf reaches 160°F (71°C).

Step 6: Rest and Serve

  1. Let the meatloaf rest for 5-10 minutes before slicing. This helps keep it juicy!

Notes

  • Don’t Skip the Sautéing: Cooking the vegetables beforehand prevents them from releasing too much water in the meatloaf.
  • Use Fresh Cheese: Shred your cheese for the best melt—pre-shredded cheese often has additives that affect its texture.
  • Let It Rest: Giving the meatloaf a few minutes to rest after baking makes slicing easier and keeps it moist.
