Ingredients
Scale
- 1 can (15 oz) whole kernel corn, drained: Adds texture to the dish.
- 1 can (15 oz) cream-style corn: Brings creamy sweetness.
- 1 cup sour cream: Adds richness and tang.
- 1/2 cup unsalted butter, melted: For buttery goodness.
- 1 package (8.5 oz) corn muffin mix: The base that ties it all together.
- Optional mix-ins: 1 cup shredded cheddar cheese, diced jalapeños.
Instructions
Step 1: Preheat the Oven
- Preheat your oven to 350°F (175°C).
- Grease or butter the baking dish to prevent sticking.
Step 2: Mix the Ingredients
- In a large bowl, combine the whole kernel corn, cream-style corn, sour cream, melted butter, and corn muffin mix.
- Stir until everything is well combined.
- If using optional mix-ins, fold them into the mixture at this stage.
Step 3: Assemble and Bake
- Pour the mixture into the prepared baking dish and spread it out evenly.
- Bake in the preheated oven for 45-55 minutes, or until the top is golden and a toothpick inserted into the center comes out clean.
Step 4: Cool and Serve
- Allow the casserole to cool for about 5 minutes before serving.
- Garnish with chopped parsley, a sprinkle of cheese, or a dollop of sour cream for a finishing touch.
Notes
- Use Room Temperature Ingredients: This helps the ingredients blend more smoothly.
- Cheesy Upgrade: Mix shredded cheddar cheese into the batter or sprinkle it on top during the last 10 minutes of baking.
- Add a Kick: Dice some jalapeños or add a pinch of cayenne for a spicy twist.
- Don’t Overbake: The casserole should be golden on top but still moist and creamy inside.
