  • 1 tablespoon sugar
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda

  • ¾ cup milk
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 tablespoon melted butter
  • 6 fully cooked turkey sausage links, cut into thirds
  • Maple syrup (for serving)
  • Cooking spray or additional butter (for greasing)

Instructions

Step 1: Preheat the Oven

Preheat your oven to 375°F (190°C). Lightly grease a mini muffin tin with cooking spray or butter.

Step 2: Prepare the Pancake Batter

In a mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt. In a separate bowl, whisk the milk, egg, vanilla extract, and melted butter until well combined. Pour the wet ingredients into the dry ingredients and stir until just combined—don’t overmix!

Step 3: Fill the Muffin Tin

Spoon a small amount of batter into each mini muffin cup, filling about halfway.

Step 4: Add the Sausage

Place a piece of turkey sausage into the center of each muffin cup, pressing it slightly into the batter.

Step 5: Bake

Bake for 12–15 minutes, or until the pancake bites are golden brown and a toothpick inserted comes out clean.

Step 6: Serve and Enjoy!

Let the bites cool slightly before removing them from the pan. Serve warm with maple syrup for dipping!
