Ingredients
- 1 cup all-purpose flour
- 1 tablespoon sugar
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- ¾ cup milk
- 1 egg
- 1 teaspoon vanilla extract
- 1 tablespoon melted butter
- 6 fully cooked turkey sausage links, cut into thirds
- Maple syrup (for serving)
- Cooking spray or additional butter (for greasing)
Instructions
Preheat your oven to 375°F (190°C). Lightly grease a mini muffin tin with cooking spray or butter.
In a mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt. In a separate bowl, whisk the milk, egg, vanilla extract, and melted butter until well combined. Pour the wet ingredients into the dry ingredients and stir until just combined—don’t overmix!
Spoon a small amount of batter into each mini muffin cup, filling about halfway.
Place a piece of turkey sausage into the center of each muffin cup, pressing it slightly into the batter.
Bake for 12–15 minutes, or until the pancake bites are golden brown and a toothpick inserted comes out clean.
Let the bites cool slightly before removing them from the pan. Serve warm with maple syrup for dipping!
Notes
- Don’t Overmix the Batter – Mix just until the ingredients come together for fluffy bites.
- Use Pre-Cooked Sausages – Saves time and ensures they cook perfectly in the batter.
- Make It Sweeter – Add a little cinnamon or drizzle with honey.
- Make It Healthier – Use whole wheat flour or a milk alternative.
