Ingredients
Scale
For the Dough:
- 1 cup warm water (110°F or 43°C)
- 2 1/4 teaspoons active dry yeast (1 packet)
- 2 tablespoons honey
- 2 tablespoons molasses
- 1 tablespoon unsweetened cocoa powder
- 1 teaspoon salt
- 2 tablespoons vegetable oil
- 1 1/2 cups bread flour
- 1 1/2 cups whole wheat flour
For Topping:
- Cornmeal, for dusting
Instructions
Step 1: Activate the Yeast
- In a large mixing bowl, combine warm water, yeast, and honey. Stir gently and let it sit for 5-10 minutes until it becomes frothy.
Step 2: Mix the Dough
- Add molasses, cocoa powder, salt, and vegetable oil to the yeast mixture. Stir to combine.
- Gradually mix in bread flour and whole wheat flour until a sticky dough forms.
Step 3: Knead the Dough
- Knead the dough on a floured surface for 8-10 minutes (or use a stand mixer with a dough hook for 5-6 minutes) until smooth and elastic.
Step 4: Let the Dough Rise
- Place the dough in a lightly oiled bowl, cover with a kitchen towel, and let it rise in a warm place for 1-2 hours or until it doubles in size.
Step 5: Shape and Rest
- Punch down the dough and divide it into two equal portions. Shape each portion into an oval loaf or place in loaf pans.
- Sprinkle a baking sheet or loaf pans with cornmeal and place the loaves on top. Cover with a towel and let rise for another 30-45 minutes.
Step 6: Bake the Bread
- Preheat your oven to 375°F (190°C).
- Bake the loaves for 25-30 minutes, or until the bread sounds hollow when tapped on the bottom.
Step 7: Cool and Serve
- Let the bread cool slightly before slicing. Serve warm with butter for the authentic Outback experience.
Notes
- Measure Flour Correctly: Scoop and level your flour to avoid dense bread.
- Use Warm Water: Ensure the water is not too hot to prevent killing the yeast.
- Customize Sweetness: Adjust the amount of honey and molasses for your preferred sweetness.
