For the Pancakes:
- 1 1/2 cups all-purpose flour
- 1/4 cup cocoa powder
- 3 tablespoons granulated sugar
- 1 tablespoon baking powder
- 1/4 teaspoon salt
- 1 1/4 cups milk
- 1 large egg
- 3 tablespoons unsalted butter, melted (plus extra for greasing the pan)
- 1 teaspoon vanilla extract
- 8–10 Oreo cookies, crushed (reserve a few for garnish)
For the Topping:
- 1/2 cup powdered sugar
- 2–3 tablespoons milk (adjust for desired consistency)
- 1/2 teaspoon vanilla extract
- Whipped cream and extra crushed Oreos, for garnish
Instructions
Step 1: Prepare the Batter
- In a large bowl, whisk together the flour, cocoa powder, sugar, baking powder, and salt.
- In a separate bowl, combine the milk, egg, melted butter, and vanilla extract.
- Gradually pour the wet ingredients into the dry ingredients, stirring until just combined. (A few lumps are okay; overmixing can make the pancakes tough.)
- Gently fold in the crushed Oreos, reserving some for garnish.
Step 2: Cook the Pancakes
- Heat a nonstick skillet or griddle over medium heat and grease lightly with butter.
- Pour 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface and the edges look set, about 2-3 minutes.
- Flip the pancake and cook the other side for another 1-2 minutes until fully cooked. Repeat with the remaining batter.
Step 3: Make the Topping
- In a small bowl, whisk together powdered sugar, milk, and vanilla extract until smooth and drizzle-worthy. Adjust the milk for your preferred consistency.
Step 4: Assemble and Serve
- Stack the pancakes on a plate, drizzle with the topping, and garnish with whipped cream and extra crushed Oreos. Serve immediately and enjoy!
