For the Mashed Potatoes:

  • 2 lbs potatoes (Yukon Gold or Russet), peeled and cubed
  • 3 tablespoons butter
  • ½ cup milk or cream
  • Salt and pepper, to taste

For the Meatballs:

  • 1 lb ground beef or chicken (your choice)
  • 1 egg
  • ½ cup breadcrumbs
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon paprika
  • 1 tablespoon fresh parsley, chopped (or 1 teaspoon dried)
  • Salt and pepper, to taste

For the Gravy:

  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 2 cups chicken or beef broth
  • 1 teaspoon soy sauce (for extra depth)
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • Salt and pepper, to taste

Instructions

Step 1: Prepare the Meatballs

  1. In a mixing bowl, combine ground meat, egg, breadcrumbs, garlic powder, onion powder, paprika, parsley, salt, and pepper. Mix until well combined.
  2. Roll the mixture into small meatballs (about 1 inch in diameter).

Step 2: Cook the Potatoes and Brown the Meatballs

  1. In a large pot or deep skillet, add the peeled and cubed potatoes. Fill the pot with enough water to just cover the potatoes and add a pinch of salt.
  2. Bring to a boil and cook until the potatoes are tender, about 12-15 minutes. Drain and set aside.
  3. In the same pot, melt 1 tablespoon of butter. Add the meatballs in batches and cook until browned on all sides (they don’t need to cook through yet). Remove the meatballs and set aside.

Step 3: Make the Gravy

  1. In the same pot, melt 2 tablespoons of butter. Add the flour and whisk to create a smooth paste. Cook for 1-2 minutes until golden brown.
  2. Gradually pour in the broth, whisking constantly to avoid lumps.
  3. Stir in soy sauce, garlic powder, onion powder, salt, and pepper. Let the gravy simmer until it thickens, about 3-5 minutes.

Step 4: Combine and Cook

  1. Return the meatballs to the pot with the gravy. Cover and simmer for 10 minutes, or until the meatballs are fully cooked.
  2. While the meatballs are simmering, mash the cooked potatoes with butter, milk, salt, and pepper until creamy.

Step 5: Serve and Enjoy

  1. Spoon the mashed potatoes onto plates and top with meatballs and gravy. Garnish with fresh parsley if desired. Serve warm and enjoy!
