  • 1 ½ lbs beef stew meat, cut into 1-inch cubes
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 3 carrots, sliced
  • 3 celery stalks, chopped
  • 2 large potatoes, peeled and diced
  • 1 cup green beans, trimmed (optional)
  • 1 cup frozen peas
  • 3 cups beef broth
  • 1 cup tomato sauce
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 2 bay leaves
  • 1 teaspoon paprika
  • Salt and pepper, to taste
  • 2 tablespoons all-purpose flour (optional, for thickening)
  • Fresh parsley, chopped (for garnish)

Instructions

Step 1: Sear the Beef

  1. Heat olive oil in a large Dutch oven over medium-high heat.
  2. Season the beef cubes with salt and pepper. Add them to the pot in batches and sear until browned on all sides. Remove and set aside.

Step 2: Sauté the Aromatics

  1. In the same pot, add the onion and garlic. Sauté for 2-3 minutes until fragrant and softened.

Step 3: Add the Vegetables

  1. Stir in the carrots, celery, potatoes, and green beans (if using). Cook for 3-4 minutes to let them absorb the flavors.

Step 4: Build the Stew

  1. Add the seared beef back to the pot. Pour in the beef broth, tomato sauce, and Worcestershire sauce.
  2. Stir in the thyme, rosemary, bay leaves, paprika, and a pinch of salt and pepper.

Step 5: Simmer and Cook

  1. Bring the stew to a boil, then reduce the heat to low. Cover and simmer for 1 ½ to 2 hours, stirring occasionally, until the beef is tender and the vegetables are cooked through.

Step 6: Add the Peas and Thicken (Optional)

  1. In the last 10 minutes of cooking, add the frozen peas.
  2. If you prefer a thicker stew, mix the flour with a few tablespoons of water to make a slurry. Stir it into the stew and cook for an additional 5 minutes.

Step 7: Garnish and Serve

  1. Remove the bay leaves and sprinkle the stew with fresh parsley before serving. Serve warm with crusty bread or over mashed potatoes.
