Ingredients
Scale
- 12 oz pasta (fettuccine, penne, or any shape you prefer)
- 4 cups water or low-sodium vegetable broth
- 2 cups broccoli florets
- 1 cup heavy cream
- 1 cup grated Parmesan cheese (plus extra for garnish)
- 2 tablespoons butter
- 2 garlic cloves, minced
- 1/2 teaspoon salt (adjust to taste)
- 1/4 teaspoon black pepper
- 1/4 teaspoon nutmeg (optional, for added depth)
- Fresh parsley, chopped (for garnish)
Instructions
Step 1: Cook the Pasta
- In a large pot, combine pasta, water or broth, salt, and garlic.
- Bring to a boil over medium-high heat, stirring occasionally to prevent sticking.
Step 2: Add the Broccoli
- When the pasta is about halfway cooked (approximately 5-6 minutes), add the broccoli florets to the pot.
- Stir to combine, and continue cooking until the pasta is al dente and the broccoli is tender, about 4-5 more minutes.
Step 3: Make the Alfredo Sauce
- Reduce the heat to low and stir in the butter until melted.
- Pour in the heavy cream and sprinkle in the Parmesan cheese.
- Stir continuously until the cheese is fully melted and the sauce is smooth and creamy.
Step 4: Season and Serve
- Add black pepper and nutmeg (if using) to taste.
- Remove from heat and let the pasta sit for a minute to thicken.
- Garnish with fresh parsley and extra Parmesan, if desired.
- Serve hot and enjoy the creamy goodness!
Notes
- Use Fresh Parmesan: Grating your own Parmesan ensures a smoother sauce.
- Don’t Overcook the Pasta: Keep an eye on it to prevent it from becoming mushy.
- Customize Vegetables: Swap broccoli for spinach, peas, or asparagus for variety.
- Control Consistency: If the sauce is too thick, add a splash of milk or broth to thin it out.
