This One Pot Broccoli Pasta Alfredo is the perfect combination of rich Alfredo sauce, tender pasta, and fresh broccoli—all cooked in a single pot for easy cleanup. It’s comforting, quick, and packed with flavor, making it a go-to recipe for busy weeknights.


Ingredients

  • 12 oz pasta (fettuccine, penne, or any shape you prefer)
  • 4 cups water or low-sodium vegetable broth
  • 2 cups broccoli florets
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese (plus extra for garnish)
  • 2 tablespoons butter
  • 2 garlic cloves, minced
  • 1/2 teaspoon salt (adjust to taste)
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon nutmeg (optional, for added depth)
  • Fresh parsley, chopped (for garnish)

Instructions

Step 1: Cook the Pasta

  1. In a large pot, combine pasta, water or broth, salt, and garlic.
  2. Bring to a boil over medium-high heat, stirring occasionally to prevent sticking.

Step 2: Add the Broccoli

  1. When the pasta is about halfway cooked (approximately 5-6 minutes), add the broccoli florets to the pot.
  2. Stir to combine, and continue cooking until the pasta is al dente and the broccoli is tender, about 4-5 more minutes.

Step 3: Make the Alfredo Sauce

  1. Reduce the heat to low and stir in the butter until melted.
  2. Pour in the heavy cream and sprinkle in the Parmesan cheese.
  3. Stir continuously until the cheese is fully melted and the sauce is smooth and creamy.

Step 4: Season and Serve

  1. Add black pepper and nutmeg (if using) to taste.
  2. Remove from heat and let the pasta sit for a minute to thicken.
  3. Garnish with fresh parsley and extra Parmesan, if desired.
  4. Serve hot and enjoy the creamy goodness!
