Ingredients

  • 12 oz linguine or spaghetti
  • 1 lb large shrimp, peeled and deveined
  • 2 teaspoons Old Bay seasoning
  • 2 tablespoons olive oil
  • 4 garlic cloves, minced
  • 1/4 teaspoon red pepper flakes (optional)
  • 1/4 cup unsalted butter
  • 1/2 cup chicken broth
  • 1/4 cup grated Parmesan cheese
  • Juice of 1 lemon
  • Salt and pepper, to taste
  • 2 tablespoons fresh parsley, chopped

Instructions

Step 1: Cook the Pasta

  1. Bring a large pot of salted water to a boil.
  2. Cook the pasta according to package instructions until al dente. Reserve 1 cup of pasta water, then drain and set aside.

Step 2: Season and Cook the Shrimp

  1. In a bowl, toss the shrimp with Old Bay seasoning until evenly coated.
  2. Heat the olive oil in a large skillet over medium-high heat.
  3. Add the shrimp in a single layer and cook for 2-3 minutes per side, or until pink and opaque. Remove the shrimp and set aside.

Step 3: Make the Garlic Butter Sauce

  1. In the same skillet, reduce the heat to medium and add the butter.
  2. Stir in the minced garlic and red pepper flakes (if using) and cook for 1 minute until fragrant.
  3. Pour in the chicken broth and bring to a simmer, scraping up any bits from the bottom of the pan.

Step 4: Combine and Serve

  1. Add the cooked pasta to the skillet and toss to coat in the sauce.
  2. Stir in the Parmesan cheese, lemon juice, and shrimp. Add pasta water a little at a time if the sauce needs thinning.
  3. Season with salt and pepper to taste.
  4. Garnish with fresh parsley and serve immediately.

Notes

  • Don’t Overcook Shrimp: They cook quickly, so remove them as soon as they turn pink.
  • Reserve Pasta Water: This starchy water helps bind the sauce to the pasta.
