Instructions
Step 1: Preheat the Oven
- Preheat your oven to 350°F (175°C).
- Line a baking sheet with parchment paper.
Step 2: Mix the Dry Ingredients
- In a large bowl, combine the rolled oats, flour, baking powder, cinnamon, and salt. Set aside.
Step 3: Combine the Wet Ingredients
- In a separate bowl, whisk together the honey (or maple syrup), applesauce, egg, coconut oil, and vanilla extract.
Step 4: Bring It All Together
- Pour the wet ingredients into the bowl of dry ingredients and stir until just combined.
- Fold in your desired mix-ins like raisins, nuts, or chocolate chips.
Step 5: Shape the Cookies
- Use a spoon or cookie scoop to drop 2-tablespoon portions of dough onto the prepared baking sheet.
- Flatten each cookie slightly with the back of a spoon.
Step 6: Bake and Cool
