  • 1 cup powdered sugar
  • 1/2 cup pistachio pudding mix
  • 1 cup heavy whipping cream, cold
  • 1 teaspoon vanilla extract

For Garnish:

  • Chopped pistachios
  • Whipped cream
  • White chocolate shavings or crushed cookies (optional)

Instructions

Step 1: Make the Crust

  1. In a bowl, combine the graham cracker crumbs, melted butter, and sugar. Mix until the crumbs are evenly coated and the mixture resembles wet sand.
  2. Press the mixture firmly into the bottom of a springform pan to form an even crust. Refrigerate while you prepare the filling.

Step 2: Prepare the Filling
3. In a large mixing bowl, beat the cream cheese until smooth and creamy.
4. Add the powdered sugar, pistachio pudding mix, and vanilla extract. Mix until well combined.
5. In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until fully incorporated and fluffy.

Step 3: Assemble the Cheesecake
6. Pour the pistachio filling over the prepared crust, spreading it evenly with a spatula. Smooth the top for a clean finish.
7. Refrigerate the cheesecake for at least 4 hours, or until fully set. For best results, chill overnight.

Step 4: Garnish and Serve
8. Before serving, garnish the cheesecake with chopped pistachios, whipped cream, and any additional toppings of your choice.
