  • 1/3 cup unsalted butter, melted
  • 2 tablespoons sugar

  • 1 cup heavy whipping cream, chilled
  • 1/2 cup powdered sugar
  • 1/4 cup lemon juice (freshly squeezed)
  • 1 tablespoon lemon zest
  • 1 teaspoon vanilla extract

For the Topping:

  • 1 cup fresh raspberries
  • 2 tablespoons raspberry jam (optional, for a glossy finish)
  • Lemon zest (optional, for garnish)

Instructions

Step 1: Make the Crust

  1. In a bowl, mix the graham cracker crumbs, melted butter, and sugar until well combined.
  2. Press the mixture firmly into the bottom of a 9-inch springform pan to form an even crust. Use the back of a spoon to smooth it out.
  3. Refrigerate the crust while you prepare the filling.

Step 2: Prepare the Cheesecake Filling

  1. In a large mixing bowl, beat the cream cheese with an electric mixer until smooth and creamy.
  2. Add the powdered sugar, lemon juice, lemon zest, and vanilla extract, and mix until well incorporated.
  3. In a separate bowl, whip the heavy cream until stiff peaks form.
  4. Gently fold the whipped cream into the cream cheese mixture until smooth and fluffy.

Step 3: Assemble the Cheesecake

  1. Pour the cheesecake filling over the chilled crust and spread it evenly with a spatula.
  2. Smooth the top, cover the pan with plastic wrap, and refrigerate for at least 4–6 hours or overnight to set.

Step 4: Add the Raspberry Topping

  1. Once the cheesecake is set, top it with fresh raspberries.
  2. For a glossy finish, gently warm the raspberry jam and drizzle it over the raspberries. Garnish with lemon zest, if desired.
