Ingredients

Scale

Crust:

  • 1 ½ cups crushed chocolate cookies (like Oreos, without the filling)
  • 6 tablespoons unsalted butter, melted

Chocolate Filling:

  • 1 cup semi-sweet chocolate chips
  • 1 cup heavy cream
  • 3 large eggs
  • ¾ cup granulated sugar
  • 2 tablespoons cocoa powder
  • 1 teaspoon vanilla extract
  • ½ teaspoon salt

Whipped Cream Topping:

  • 1 cup heavy whipping cream
  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla extract
  • Chocolate shavings or cocoa powder (optional, for garnish)

Instructions

Step 1: Prepare the Crust

  1. Preheat your oven to 350°F (175°C).
  2. Combine crushed chocolate cookies and melted butter in a mixing bowl. Mix until the crumbs are evenly coated.
  3. Press the mixture firmly into the bottom and up the sides of a 9-inch pie pan.
  4. Bake the crust for 8-10 minutes, then let it cool completely.

Step 2: Make the Chocolate Filling

  1. In a saucepan over low heat, warm the heavy cream until it’s just about to simmer. Remove from heat and stir in the chocolate chips until smooth.
  2. In a mixing bowl, whisk together eggs, sugar, cocoa powder, vanilla, and salt until combined.
  3. Gradually add the melted chocolate mixture to the egg mixture, stirring constantly to prevent curdling.
  4. Pour the filling into the cooled crust and smooth the top.
  5. Bake for 25-30 minutes, or until the filling is set but still slightly jiggly in the center. Let it cool completely, then refrigerate for at least 4 hours.

Step 3: Whip the Cream Topping

  1. In a cold mixing bowl, whip the heavy cream, powdered sugar, and vanilla until stiff peaks form.
  2. Spread the whipped cream over the chilled pie.
  3. Garnish with chocolate shavings or a dusting of cocoa powder, if desired.

Step 4: Serve and Enjoy

  1. Slice into pieces and serve chilled.
  2. Store leftovers in the refrigerator for up to 3 days.

Notes

  • Chill Time is Key: Letting the pie set in the refrigerator ensures the layers stay firm and slice neatly.
  • Use High-Quality Chocolate: The better the chocolate, the richer the flavor.
  • Customize the Topping: Swap whipped cream for marshmallow fluff for a fun twist.
