Ingredients

For the Casserole:

  • Rotisserie chicken (4 cups, shredded) – Tender and flavorful.
  • Cream cheese (8 oz, softened) – Adds rich creaminess.
  • Sour cream (1 cup) – Helps make the casserole extra smooth.
  • Mayonnaise (½ cup) – Adds a bit of tang and richness.
  • Cream of chicken soup (1 can, 10.5 oz) – The base for the creamy sauce.
  • Cheddar cheese (1 ½ cups, shredded) – Melty and delicious.
  • Garlic powder (1 tsp) – Enhances the flavor.
  • Onion powder (1 tsp) – Adds a subtle depth.
  • Salt & black pepper – To taste.

For the Topping:

 

  • Ritz crackers (1 sleeve, crushed) – Buttery and crispy!
  • Butter (4 tbsp, melted) – Helps make the topping golden and crunchy.
  • Parmesan cheese (¼ cup) – Adds a savory finish.

Instructions

Step 1: Preheat the Oven

Preheat your oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish.

Step 2: Make the Creamy Mixture

In a large mixing bowl, combine the softened cream cheese, sour cream, mayonnaise, cream of chicken soup, garlic powder, onion powder, salt, and pepper. Mix until smooth.

Step 3: Add the Chicken & Cheese

Stir in the shredded rotisserie chicken and 1 cup of cheddar cheese. Mix well to coat everything in the creamy sauce.

Step 4: Assemble the Casserole

Spread the chicken mixture evenly into the prepared baking dish. Sprinkle the remaining ½ cup of cheddar cheese on top.

Step 5: Prepare the Topping

In a small bowl, mix the crushed Ritz crackers with melted butter and Parmesan cheese. Sprinkle the mixture evenly over the casserole.

Step 6: Bake & Serve

Bake uncovered for 30–35 minutes, or until bubbly and golden brown on top. Let it rest for 5 minutes before serving.
