  • 12 large marshmallows, cut in half
  • 1 cup mini chocolate chips or chopped chocolate

Instructions

Step 1: Prepare the Dough

  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a large bowl, beat the softened butter, granulated sugar, and brown sugar together until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  4. In a separate bowl, whisk together the flour, cocoa powder, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Fold in the mini chocolate chips or chopped chocolate.

Step 2: Shape and Add the Marshmallow Surprise
6. Scoop about 2 tablespoons of dough and roll it into a ball. Flatten the dough slightly in your palm and place half a marshmallow in the center.
7. Wrap the dough around the marshmallow to fully encase it, then roll it back into a ball. Place the dough balls on the prepared baking sheet, leaving about 2 inches of space between each.

Step 3: Bake the Cookies
8. Bake the cookies for 8-10 minutes, or until the edges are set but the centers are still soft.
9. Let the cookies cool on the baking sheet for 5 minutes before transferring to a cooling rack.

Step 4: Optional Toppings
10. Drizzle melted chocolate over the cookies or sprinkle with crushed candy canes for a festive touch.
