Ingredients
- 1 cup (2 sticks) unsalted butter, softened
- 1 cup granulated sugar
- ½ cup brown sugar, packed
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 ¼ cups all-purpose flour
- ½ cup unsweetened cocoa powder
- 1 teaspoon baking soda
- ½ teaspoon salt
- 12 large marshmallows, cut in half
- 1 cup mini chocolate chips or chopped chocolate
- Optional toppings: Crushed candy canes, sprinkles, or extra chocolate drizzle
Instructions
Step 1: Prepare the Dough
- Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a large bowl, beat the softened butter, granulated sugar, and brown sugar together until light and fluffy.
- Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
- In a separate bowl, whisk together the flour, cocoa powder, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Fold in the mini chocolate chips or chopped chocolate.
Step 2: Shape and Add the Marshmallow Surprise
6. Scoop about 2 tablespoons of dough and roll it into a ball. Flatten the dough slightly in your palm and place half a marshmallow in the center.
7. Wrap the dough around the marshmallow to fully encase it, then roll it back into a ball. Place the dough balls on the prepared baking sheet, leaving about 2 inches of space between each.
Step 3: Bake the Cookies
8. Bake the cookies for 8-10 minutes, or until the edges are set but the centers are still soft.
9. Let the cookies cool on the baking sheet for 5 minutes before transferring to a cooling rack.
Step 4: Optional Toppings
10. Drizzle melted chocolate over the cookies or sprinkle with crushed candy canes for a festive touch.
Notes
- Chill the Dough: If the dough feels too soft, refrigerate it for 20-30 minutes before shaping.
- Use Fresh Marshmallows: Fresh, fluffy marshmallows melt best in the cookies.
- Get Creative with Toppings: Try dusting the cookies with powdered sugar or adding a sprinkle of sea salt for contrast.
