Description

Inspired by the classic “Marry Me Chicken,” this soup is loaded with tender chicken, sun-dried tomatoes, garlic, and Italian herbs in a rich, creamy broth. Perfect for cozy nights or when you need a bowl of pure comfort!


Ingredients

For the Soup:

  • Olive Oil (2 tbsp)
  • Chicken Breasts (2, cooked and shredded)
  • Garlic (4 cloves, minced)
  • Sun-Dried Tomatoes (½ cup, chopped)
  • Carrots (1, diced)
  • Celery (2 stalks, chopped)
  • Onion (1 small, diced)
  • Italian Seasoning (1 tsp)
  • Red Pepper Flakes (½ tsp, optional)
  • Chicken Broth (4 cups)
  • Heavy Cream (1 cup)
  • Parmesan Cheese (½ cup, grated)
  • Spinach (2 cups, fresh)
  • Salt & Pepper (to taste)

For Serving:

 

  • Fresh Basil (for garnish)
  • Extra Parmesan Cheese
  • Crusty Bread

Instructions

Step 1: Sauté the Aromatics
In a large pot, heat olive oil over medium heat. Add the diced onion, carrots, and celery. Sauté for about 5 minutes until softened.

Step 2: Add Garlic & Sun-Dried Tomatoes
Stir in the minced garlic, sun-dried tomatoes, Italian seasoning, and red pepper flakes. Cook for 1 minute until fragrant.

Step 3: Add Broth & Chicken
Pour in the chicken broth and bring to a simmer. Add the shredded chicken, season with salt and pepper, and let cook for 10 minutes to develop flavor.

Step 4: Make It Creamy
Lower the heat and stir in the heavy cream and grated Parmesan cheese. Let simmer for 5 more minutes, stirring occasionally.

Step 5: Add the Spinach
Stir in the fresh spinach and let it wilt into the soup.

 

Step 6: Serve & Enjoy!
Ladle the soup into bowls and top with fresh basil and extra Parmesan. Serve with crusty bread for dipping!

Notes

  • Use Rotisserie Chicken – A quick and easy shortcut for shredded chicken.
  • Don’t Boil the Cream – Keep the heat low to prevent curdling.
  • Want It Thicker? – Add a cornstarch slurry (1 tbsp cornstarch + 2 tbsp water) to thicken the soup.

 

  • Prefer a Lighter Version? – Use half-and-half instead of heavy cream.
