Ingredients
For the Mac & Cheese:
1 lb elbow macaroni or cavatappi
2 tbsp unsalted butter
2 tbsp all-purpose flour
2 cups whole milk (warm)
1 cup heavy cream
2½ cups sharp cheddar cheese, shredded
1 cup Gruyère cheese, shredded (or use mozzarella for a milder taste)
½ cup Parmesan cheese, grated
1 tsp Dijon mustard
½ tsp garlic powder
½ tsp smoked paprika
Salt and black pepper to taste
1½ cups cooked lobster meat (claw and tail, chopped into bite-size pieces)
1 tbsp lemon juice
For the Topping:
¾ cup panko breadcrumbs
2 tbsp unsalted butter, melted
2 tbsp Parmesan cheese
1 tsp chopped parsley (for garnish)
Instructions
Step 1: Cook the Pasta
Bring a large pot of salted water to a boil.
Add macaroni and cook until just al dente (about 1-2 minutes less than package directions).
Drain and set aside. Do not overcook—it will continue cooking in the oven.
Step 2: Make the Roux
In a medium saucepan, melt 2 tbsp of butter over medium heat.
Add flour and whisk constantly for 1-2 minutes to form a smooth paste (this cooks out the raw flour taste).
Step 3: Build the Cheese Sauce
Slowly whisk in the warm milk and cream, stirring until smooth.
Simmer for 3-4 minutes, stirring often, until slightly thickened.
Stir in Dijon mustard, garlic powder, smoked paprika, salt, and black pepper.
Reduce heat to low, then add cheddar, Gruyère, and Parmesan cheese.
Stir until melted and smooth.
Step 4: Add the Lobster & Pasta
Gently stir the cooked pasta into the cheese sauce.
Add chopped lobster meat and lemon juice, folding everything together.
Taste and adjust seasoning as needed.
Step 5: Transfer to Baking Dish
Pour the lobster mac and cheese into a greased 9×13 baking dish.
Smooth the top with a spatula.
Step 6: Make the Topping
In a small bowl, mix panko breadcrumbs, melted butter, and Parmesan cheese.
Sprinkle evenly over the top of the mac and cheese.
Step 7: Bake to Golden Perfection
Preheat oven to 375°F (190°C).
Bake uncovered for 20-25 minutes, or until bubbly and the top is golden brown.
If needed, broil for an extra 1-2 minutes for a crispier topping (watch closely!).
Step 8: Garnish & Serve
Remove from oven and let sit for 5 minutes before serving.
Sprinkle with chopped parsley for a fresh finish.
