  • 4 large baking potatoes (like Russets): Cleaned and scrubbed.
  • 1 tablespoon olive oil: To crisp up the skin.
  • 1/2 teaspoon salt: For seasoning.

For the Steak Bites:

  • 1 lb steak (sirloin, ribeye, or tenderloin): Cut into bite-sized pieces.
  • 2 tablespoons olive oil or butter: For cooking.
  • 2 teaspoons garlic powder: For flavor.
  • 1 teaspoon smoked paprika: Adds a subtle smoky touch.
  • Salt and pepper, to taste.

Toppings:

  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream (or plain Greek yogurt for a lighter option)
  • 1/4 cup chopped green onions
  • 1/4 cup butter: For that rich, creamy potato flavor.

Instructions

Step 1: Prepare and Bake the Potatoes

  1. Preheat your oven to 400°F (200°C).
  2. Poke a few holes in each potato with a fork. Rub them with olive oil and sprinkle with salt.
  3. Place the potatoes directly on the oven rack or on a baking sheet. Bake for 50-60 minutes, or until they are tender when pierced with a knife.

Step 2: Cook the Steak Bites

  1. While the potatoes are baking, heat olive oil or butter in a large skillet over medium-high heat.
  2. Season the steak bites with garlic powder, smoked paprika, salt, and pepper.
  3. Add the steak bites to the skillet in a single layer. Sear for 2-3 minutes per side until golden brown and cooked to your desired doneness. Remove from heat and set aside.

Step 3: Assemble the Loaded Potatoes

  1. Once the potatoes are baked, cut a slit down the middle of each and fluff the insides with a fork. Add a pat of butter to each potato.
  2. Sprinkle with shredded cheddar cheese and let it melt slightly. Top with sour cream and chopped green onions.
  3. Finally, spoon the steak bites over the loaded potatoes, allowing the juices to soak into the potato for extra flavor.

Notes

  • Choose the Right Steak: Sirloin is a great option for its tenderness and flavor, but ribeye works wonderfully, too.
  • Crispy Potato Skins: Rubbing the potatoes with olive oil before baking makes the skins irresistibly crispy.
