  • 1/2 cup plain yogurt: Or sour cream.
  • 1/4 cup milk
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon lemon zest
  • 2 tablespoons poppy seeds

For the Lemon Glaze (Optional)

  • 1 cup powdered sugar
  • 23 tablespoons fresh lemon juice

Instructions

Step 1: Preheat the Oven

  1. Preheat your oven to 350°F (175°C).
  2. Grease and line a 9×5-inch loaf pan with parchment paper for easy removal.

Step 2: Mix the Dry Ingredients

  1. In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and poppy seeds.

Step 3: Cream the Butter and Sugar

  1. In a large bowl, cream the softened butter and sugar together until light and fluffy.
  2. Beat in the eggs one at a time, followed by the lemon juice, lemon zest, yogurt, and milk.

Step 4: Combine Wet and Dry Ingredients

  1. Gradually fold the dry ingredients into the wet mixture, mixing until just combined. Avoid overmixing to keep the bread tender.

Step 5: Bake the Bread

  1. Pour the batter into the prepared loaf pan and smooth the top.
  2. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  3. Let the bread cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.

Step 6: Prepare the Lemon Glaze (Optional)

  1. In a small bowl, whisk together the powdered sugar and lemon juice until smooth.
