Ingredients

Scale
  • 1 cup cottage cheese (smooth or blended)
  • 1/2 cup Greek yogurt (plain or vanilla)
  • 3 tablespoons fresh lemon juice
  • 1 teaspoon lemon zest (plus extra for garnish)
  • 2 tablespoons honey or maple syrup (adjust to taste)
  • 1/2 teaspoon vanilla extract
  • Optional topping ideas: Fresh berries, whipped cream, or crushed graham crackers

Instructions

  • Blend the Base
    • In a blender or food processor, combine cottage cheese, Greek yogurt, lemon juice, lemon zest, honey, and vanilla extract. Blend until smooth and creamy.
  • Adjust Sweetness
    • Taste the mousse and add more honey or lemon juice if needed to balance sweetness and tanginess. Blend again if necessary.
  • Chill and Set
    • Transfer the mousse into serving bowls or glasses. Cover and refrigerate for at least 1 hour to allow the flavors to meld and the mousse to set.
  • Garnish and Serve
    • Before serving, top with fresh berries, an extra sprinkle of lemon zest, or a dollop of whipped cream. Enjoy chilled!

Notes

  • Blend Thoroughly: For a silky texture, ensure the cottage cheese is fully blended. If needed, strain it through a fine mesh sieve before blending.
  • Add Layers: Create parfait-style layers with the mousse, granola, and fresh fruit for a beautiful presentation.
  • Use Full-Fat Ingredients: Full-fat cottage cheese and Greek yogurt yield a creamier mousse, but you can use low-fat versions for a lighter option.
