Ingredients

For the Lamb Gyros:

  • 1 lb ground lamb (or a mix of lamb and beef)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried oregano
  • 1 teaspoon ground cumin
  • ½ teaspoon smoked paprika
  • Salt and black pepper, to taste
  • 1 tablespoon olive oil (for cooking)

For the Tzatziki Sauce:

  • 1 cup plain Greek yogurt
  • ½ cucumber, grated and drained
  • 1 clove garlic, minced
  • 1 tablespoon fresh dill, chopped
  • 1 tablespoon lemon juice
  • Salt and pepper, to taste

For Assembly:

  • 46 pita bread rounds
  • 1 cup lettuce, shredded
  • ½ cup cherry tomatoes, halved
  • ½ red onion, thinly sliced
  • Feta cheese, crumbled (optional)

Instructions

Step 1: Prepare the Tzatziki Sauce

  1. Grate the cucumber, then place it in a clean kitchen towel or paper towel and squeeze out the excess water.
  2. In a mixing bowl, combine the Greek yogurt, grated cucumber, minced garlic, fresh dill, lemon juice, salt, and pepper. Mix well.
  3. Cover and refrigerate the sauce while preparing the lamb to let the flavors meld.

Step 2: Cook the Lamb

  1. Heat a skillet over medium heat and add the olive oil.
  2. In a bowl, combine the ground lamb with garlic powder, onion powder, oregano, cumin, smoked paprika, salt, and pepper. Mix until well combined.
  3. Add the seasoned lamb to the skillet and cook, breaking it up with a spatula, until browned and fully cooked (about 8-10 minutes). Remove from heat.

Step 3: Warm the Pita Bread

  1. Heat the pita bread in a dry skillet, microwave, or oven until warm and pliable.

Step 4: Assemble the Gyros

  1. Place a warm pita bread on a plate and spread a generous layer of tzatziki sauce down the center.
  2. Top with cooked lamb, shredded lettuce, cherry tomatoes, red onion slices, and crumbled feta, if using.
  3. Wrap the pita around the filling, securing it with parchment paper or a napkin for easy handling.

Notes

  • Drain the Cucumber Well: This prevents the tzatziki sauce from becoming watery.
  • Customize the Toppings: Add your favorite veggies, olives, or even pickled onions for extra flavor.
  • Use Fresh Herbs: Fresh dill in the tzatziki makes a big difference.
