For the Lamb Chops:

  • 6 lamb chops (about 1-inch thick)
  • 2 tablespoons olive oil
  • 2 teaspoons garlic, minced
  • 1 teaspoon fresh rosemary, chopped
  • 1 teaspoon fresh thyme, chopped
  • Salt and pepper, to taste
  • 1 tablespoon lemon juice

For the Mashed Potatoes:

  • 2 lbs potatoes (Yukon Gold or Russet work best), peeled and cubed
  • 4 tablespoons unsalted butter
  • ½ cup milk (or cream for extra richness)
  • Salt and pepper, to taste
  • 2 tablespoons chopped parsley (optional)

For the Asparagus:

  • 1 lb fresh asparagus, trimmed
  • 1 tablespoon olive oil
  • Salt and pepper, to taste
  • 1 teaspoon lemon zest (optional)

Instructions

Step 1: Prepare the Mashed Potatoes

  1. Boil the potatoes in a large pot of salted water for 15-20 minutes or until fork-tender.
  2. Drain the potatoes and return them to the pot. Mash them with butter and milk until smooth. Season with salt, pepper, and parsley (if using).

Step 2: Cook the Lamb Chops

  1. Pat the lamb chops dry with paper towels and season both sides with salt and pepper.
  2. In a skillet or grill pan, heat olive oil over medium-high heat. Add the garlic, rosemary, and thyme, and sauté for 30 seconds until fragrant.
  3. Add the lamb chops and cook for 3-4 minutes per side for medium-rare, or until your desired level of doneness is reached. Drizzle with lemon juice before serving.

Step 3: Roast the Asparagus

  1. Preheat your oven to 400°F (200°C). Toss the asparagus with olive oil, salt, and pepper, then spread it evenly on a baking sheet.
  2. Roast for 8-10 minutes or until tender-crisp. Sprinkle with lemon zest for added brightness.

Step 4: Assemble and Serve

  1. Plate the lamb chops alongside a generous scoop of mashed potatoes and roasted asparagus.
  2. Garnish with fresh herbs or a drizzle of olive oil, if desired.
  3. Serve warm and enjoy!
