Ingredients

  • ½ cup cottage cheese
  • 2 large eggs
  • ½ cup almond flour
  • ¼ cup coconut flour
  • ½ tsp baking powder
  • ½ tsp garlic powder (optional)
  • ½ tsp salt
  • ½ tsp Italian seasoning (optional)
  • ¼ cup shredded mozzarella cheese

Instructions

Step 1: Blend the Wet Ingredients

  1. Preheat your oven to 375°F (190°C).
  2. In a blender or food processor, blend cottage cheese and eggs until smooth.

Step 2: Mix the Dry Ingredients

  1. In a mixing bowl, whisk together almond flour, coconut flour, baking powder, garlic powder, salt, and Italian seasoning.
  2. Stir in the shredded mozzarella.

Step 3: Combine & Form the Dough

  1. Pour the blended cottage cheese mixture into the dry ingredients. Stir until a thick batter forms.

Step 4: Shape & Bake

  1. Line a baking sheet with parchment paper and spread the batter into a ¼-inch thick rectangle or circle.
  2. Bake for 15-18 minutes or until golden brown.

Step 5: Serve & Enjoy

  1. Let cool slightly before slicing. Serve warm with your favorite toppings or dips!
