Ingredients
For the Dough:

1 ½ cups warm water (110°F)

2 ¼ tsp instant yeast

1 tbsp granulated sugar

1 tsp salt

4 cups all-purpose flour

2 tbsp unsalted butter, melted
For the Filling:

1 ½ cups sharp cheddar cheese, shredded

2–3 jalapenos, thinly sliced (remove seeds for less heat)

1 tbsp butter, softened (for brushing inside before rolling)
For the Baking Soda Bath:

4 cups water

¼ cup baking soda
For Topping:

1 egg, beaten (for egg wash)

Extra shredded cheddar (about ½ cup)

Thin jalapeno slices (optional, for topping)

Instructions
Step 1: Make the Pretzel Dough

In a large mixing bowl, combine warm water, sugar, and yeast. Let sit for 5 minutes until foamy.

Add salt, melted butter, and flour. Mix until a dough forms. Knead for about 7–8 minutes until smooth and elastic (use dough hook if using a stand mixer).

Cover bowl with a towel or plastic wrap and let dough rise for 1 hour or until doubled in size.
Step 2: Prepare the Filling
4. While the dough rises, slice jalapenos and shred your cheddar cheese. Set aside.
Step 3: Roll, Fill & Twist
5. Once the dough has risen, punch it down and divide into 10 equal pieces.
6. Roll each piece into a rectangle (about 6 inches long).
7. Brush lightly with softened butter. Sprinkle with shredded cheddar and a few jalapeno slices.
8. Roll each rectangle lengthwise into a rope, then twist gently and form into a knot or spiral shape.
Step 4: Baking Soda Bath
9. Preheat oven to 425°F (220°C).
10. In a saucepan, bring 4 cups water to a boil. Carefully add baking soda (it will bubble up).
11. Reduce to simmer. Gently dip each twist into the bath for 20–30 seconds.
12. Remove with slotted spoon and place on parchment-lined baking sheet.
Step 5: Add Toppings & Bake
13. Brush each twist with beaten egg.
14. Top with extra shredded cheddar, a slice of jalapeno, and a sprinkle of coarse salt.
15. Bake for 13–15 minutes or until golden brown and bubbly.
Step 6: Cool & Serve
16. Let cool slightly before serving. These are best enjoyed warm, fresh from the oven.
Notes
Use Warm Water – Ideal water temp is around 110°F to activate yeast properly.
