- 1 teaspoon fresh thyme or rosemary, chopped (optional)
For the Garlic Cream Sauce:
- 2 tablespoons butter
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1/4 cup unsweetened apple juice
- 1 teaspoon Dijon mustard
- 1 teaspoon soy sauce
- Salt and pepper, to taste
- 1 tablespoon fresh parsley, chopped (for garnish)
Instructions
Step 1: Prepare and Season the Steak
- Take the steaks out of the fridge 30 minutes before cooking to let them come to room temperature.
- Pat them dry with paper towels and season generously with salt, pepper, and chopped thyme or rosemary, if desired.
Step 2: Cook the Steak
- Heat the olive oil in a cast iron skillet over medium-high heat until shimmering.
- Sear the steaks for 3-4 minutes per side, depending on your preferred doneness. Use a meat thermometer to check:
- Rare: 125°F (52°C)
- Medium-rare: 135°F (57°C)
- Medium: 145°F (63°C)
- Remove the steaks from the skillet and let them rest under foil while you make the sauce.
Step 3: Make the Garlic Cream Sauce
- In a small saucepan, melt the butter over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant.
- Stir in the apple juice, letting it simmer for 2-3 minutes to reduce slightly.
- Add the heavy cream, Dijon mustard, and soy sauce, whisking to combine.
- Let the sauce simmer for 5-7 minutes until thickened. Taste and adjust seasoning with salt and pepper.
Step 4: Assemble and Serve
- Place the steaks on plates and drizzle generously with the garlic cream sauce.
- Garnish with fresh parsley and serve immediately.
