Ingredients

  • Sourdough or Irish soda bread (4 slices)
  • Irish cheddar cheese (1 cup, grated)
  • Butter (2 tbsp, softened)
  • Dijon mustard (1 tsp, optional)
  • Worcestershire sauce (1 tsp, optional)
  • Black pepper (to taste)

 

  • Chopped chives (for garnish)

Instructions

  • Toast the Bread – Lightly toast the bread slices until golden but not too crispy. This helps the cheese melt without making the toast soggy.
  • Prepare the Cheese Mixture – In a bowl, mix the grated Irish cheddar with Dijon mustard, Worcestershire sauce, and black pepper. Stir well to combine.
  • Butter the Bread – Spread a thin layer of butter on each slice of toast for extra richness.
  • Add the Cheese Topping – Evenly distribute the cheese mixture over each slice of bread.
  • Melt the Cheese – Place the cheese-covered toast under a broiler for 2–3 minutes or until the cheese is bubbly and golden brown. Keep a close eye to prevent burning!

 

  • Garnish and Serve – Sprinkle with chopped chives and serve immediately.
